Another Pasta Salad

Spiral Pasta Salad
  • 1 pkg cooked spiral pasta
  • 1 block (cubed) Monterrey jack cheese or mozzarella (I like the Jack cheese)
  • 1 chopped purple onion
  • 1 bottle Italian dressing
  • 3-4 stalks chopped celery
  • 1 can sliced black olives
  • any variety of meat (boiled shrimp, summer sausage, chicken)

Mix all the ingredients together in a large bowl. Pour Italian dressing over to give it flavor. I save some dressing for later use. My favorite meat to add is boiled shrimp or summer sausage. You can use what ever you like or no meat at all. I use meat to make it a complete meal. This is a great dish for parties & families on the go. If you refrigerate it the night before make sure to add more dressing to it before serving. It will dry out in the fridge!

Poppyseed Chicken

I made this one for the family and served it over rice. It was a hit. Prep time 30min. Cooking time 20-30min. Hope you enjoy! I got this recipe from Kelly's Korner.


Poppy seed chicken


  • 2 or 3 chicken breasts, boiled and cut in small pieces



  • 1 16 oz sour cream



  • 2 cans cream of chicken



  • 2 tbls of poppyseeds



  • Ritz crackers



  • 1 stick of butter
Mix the first 4 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top. Bake for 20-30 minutes at 350.

Pasta Salad

Pasta Salad


*1 pkg cooked pasta (I prefer bow tie, but you can use whatever)
*2 tomatoes chopped
*1 cucumber chopped
*1 red onion chopped
*1 16oz bottle Italian Dressing
*1 tbsp grated Parmesan cheese
*1tbsp sesame seed
*1tbsp poppy seed
*2 tsp salt
*1 tsp paprika
*1/2 tsp garlic powder
*1/2 tsp black pepper
*1/2 tsp cayenne pepper


Set cooked pasta aside. In a small bowl, mix Parmesan cheese, sesame seed, poppy seed, salt, paprika, garlic power, black & cayenne pepper together, set aside. In a large bowl pour in cooked pasta, tomatoes, and cucumbers, stir together. Then stir in about half of the Italian dressing over the pasta mix to give it some liquid. Next, add your bowl of seasonings. Mix all of this together really well, so that the seasonings don't clump together. Then add the rest of the Italian dressing. Continue to stir. Chill in fridge for 1-2 hrs before serving.

It is quick & easy! Plus a great one to make the day before.
*If you make it the day before, save some of the dressing to pour on salad to moisten it up before serving.
